Sledding

We went sledding the other night. We only went down the hill three times because it was way too cold!!! Adam said that we only went so that I could take pictures of Elaina sledding. Mmmm...maybe. Elaina seemed to like it, but she really didn't show much excitment while there.

White Chili. Really Yummy!!

I tried a new recipe the other night that was really yummy, especially for this cold weather! It's a lot of ingredients but it was actually really easy to make. Try it out! I think you will all love it!



WHITE CHILI

Ingredients:
1 pound boneless, skinless chicken breasts (I used one chicken breast and it was plenty)
1 tablespoon vegetable oil
1 small white onion, diced
6 to 8 small garlic cloves, minced
1 (7-ounce) can diced green chiles, drained
2 (15-ounce) cans white beans,undrained
4 cups chicken broth
1 teaspoon chicken bouillon granules
2 teaspoons ground cumin
2 teaspoons dried oregano
1/2 to 1 teaspoon cayenne
1 cup sour cream, plus additional for topping
2 1/2 cups shredded Monterey Jack cheese
Chopped fresh cilantro
Chopped tomatoes

1. Cook the chicken by the desired method. Cool and tear into pieces.
Set aside.

2. Heat the oil in a large pot over medium heat. Add the onion and garlic,
and cook and stir until the onion is translucent, 2 to 3 minutes. Add
the chicken, chiles, beans, broth, chicken bouillon, cumin, oregano, and
cayenne. Simmer 30 to 45 minutes. Chili can be made ahead to this point
and refrigerated or frozen for serving later.

3. Add the 1 cup sour cream and cheese, and continue cooking until the
cheese is melted. Keep warm until serving.

4. Serve in bowls and pass cilantro, tomatoes, and additional sour cream.

Update on Elaina's Toe

Elaina lost her toe nail over the Christmas break. The whole toe nail fell off but luckily it had already mostly grown back underneath the dead one. The last days with her old toe nail were pretty grim. Just in case you wanted to know.

Christmas

It's been awhile since I posted something but I thought that I might put up some of the highlights of this Christmas. It was a lot of fun! We went to California to visit my parents. It was so much fun seeing Elaina with my side of the family, especially seeing her with her cousin Landon. They were so cute together!! Here's a little of what we did this holiday season:
Elaina saw Santa and loved him. She even said ho ho to him as we were leaving.
One of Elaina's favorite things to do is chase bubbles. She learned the word bubble while in California. We did bubbles a lot!
Another thing Elaina did a lot of were wagon rides. Here is grandma and grandpa Twitchell taking Elaina and Landon for a ride.
Elaina also loved baby Lena. Elaina just liked to watch her. Lena's so cute!
Here's Elaina in her Christmas jammies. They were so cute on her!

Those are just some of the highlights. Christmas was great this year. Our family is so blessed!
